KEARIFAN TEMPATAN DALAM PELANCONGAN GASTRONOMI HALAL SEBAGAI MODEL PEMELIHARAAN ALAM SEKITAR DI DUNIA MELAYU

Pelancongan gastronomi halal kini berkembang pesat sebagai salah satu sektor penting dalam industri pelancongan di dunia Melayu, dengan potensi besar untuk menyokong kelestarian alam sekitar. Kajian ini menumpukan kepada kearifan tempatan dalam budaya masyarakat Melayu dan bagaimana elemen-elemen ini dapat diterapkan sebagai model pemeliharaan alam sekitar dalam konteks pelancongan gastronomi halal. Pendekatan kualitatif digunakan dalam kajian ini, dengan kaedah etnografi dan temu bual untuk menganalisis adat resam, amalan pertanian tradisional, dan penyediaan makanan yang seiring dengan prinsip kelestarian. Etnografi dijalankan di tiga kawasan utama di Negeri Kedah yang terkenal dengan budaya gastronomi tempatan, di mana penyelidik terlibat dalam pemerhatian berstruktur di perkampungan budaya dan restoran makanan tradisional. Selain itu, temu bual dilakukan dengan 4 pemilik perkampungan budaya dan restoran makanan budaya, menggunakan teknik temu bual separa berstruktur untuk mendapatkan pandangan mendalam mengenai amalan tempatan yang berkaitan dengan kelestarian alam sekitar. Hasil kajian mendapati bahawa kearifan tempatan bukan sahaja memperkaya pengalaman pelancongan, tetapi juga menyumbang kepada pemeliharaan ekologi setempat. Amalan seperti penggunaan bahan-bahan tempatan, teknik pertanian organik, dan pengurusan sisa makanan yang efisien berpotensi dijadikan contoh untuk sektor pelancongan lain. Kajian ini mencadangkan integrasi kearifan tempatan dalam pelancongan gastronomi halal sebagai strategi mampan untuk pembangunan lestari di kawasan Melayu. Langkah ini bukan sahaja memperkukuhkan daya tarikan pelancongan serantau, tetapi juga meningkatkan kesedaran global mengenai kepentingan kelestarian alam sekitar. Dengan itu, pelancongan gastronomi halal berupaya menjadi pemangkin untuk menghubungkan nilai budaya, kelestarian, dan ekonomi dalam satu rangka kerja yang harmoni.

Abstract
Halal gastronomy tourism is rapidly growing as an important sector in the tourism industry within the Malay world, with great potential to support environmental sustainability. This study focuses on the local wisdom embedded in Malay culture and how these elements can be applied as a model for environmental conservation within the context of halal gastronomy tourism. A qualitative approach is used in this study, employing ethnographic methods and interviews to analyze traditions, traditional agricultural practices, and food preparation aligned with sustainability principles. The ethnography was conducted in three main areas in the state of Kedah, known for its local gastronomic culture, where the researcher engaged in structured observations in cultural villages and traditional food restaurants. Additionally, interviews were conducted with 4 owners of cultural villages and cultural food restaurants, using semi-structured interview techniques to gain in-depth insights into local practices related to environmental sustainability. The findings indicate that local wisdom not only enriches the tourism experience but also contributes to the preservation of the local ecology. Practices such as the use of local ingredients, organic farming techniques, and efficient food waste management have the potential to serve as models for other tourism sectors. This study suggests that integrating local wisdom into halal gastronomy tourism can be a sustainable strategy for development in the Malay region. This approach not only strengthens regional tourism appeal but also raises global awareness of the importance of environmental sustainability. Therefore, halal gastronomy tourism has the potential to serve as a medium for connecting cultural values, sustainability, and the economy in a harmonious framework.
